The Coronavirus pandemic has inadvertently allowed us to experience the cuisines of some of the world’s most famous chefs – virtually at least – including our own Executive Chef, Mark Godbeer.

Chef Marky, as he is fondly known, got savvy with Zoom and shared his go-to recipe for gnocchi with family during lockdown. Fluffy pillows of potato in a garlicky cream sauce – sounds like the ultimate comfort food. We thought you’d enjoy it too!

Ingredients 

Gnocchi

300 gm potato flesh
1 egg
1 egg yolk
25 gm butter, melted
100 gm plain flour, sifted
Pinch of baking powder
Salt and white pepper to taste

Chorizo, chicken and mushroom sauce

Vegetable oil

3 chicken thighs diced

200 gm chorizo skinned and diced

2 red onions diced

2 cups mushrooms chopped

1 tbsp butter

1 tbsp rosemary chopped finely

1 tbsp garlic minced

2 cups chicken stock

1/2 cup cream

200 gm goats cheese

Salt and pepper
